Coconut oil - oh coconut oil, you sweet precious gift from the gods! This is my favourite thing to own. I use is as a make-up remover, as a facial moisturizer, I use it to sauté and fry, in my hair and I always put a teaspoon of it into my morning smoothie !

Today’s breakfast: 2 pieces of whole wheat crisp bread, with a spread of 1.5% cottage cheese and avocado - and a glass of berry smoothie, made out of greek yogurt, strawberries, raspberries and blueberries.
I have a sweet tooth (like many of us), but I have found what I believe is for me, the best dessert/ice-cream substitute!
It is 3 scoops of 2% greek yogurt
Tiny bit of stevia sugar
Handful of sliced strawberries
2 large pieces of 85% dark chocolate cut into smaller pieces
Topped off with minced almonds
I can’t believe it’s not ice-cream ❤️
I decided to finally take my measurements. They will give me a better idea on how I am doing rather than my weight. Even though the most important factor is how I feel.
Current measurements are:
Chest: 93cm / 36.6 inches
Waist: 68cm / 26.7 inches
Hips: 98cm / 38.5 inches
& I feel pretty good about that!
I rarely make any fish myself except for salmon. This is a super simple recipe (i need simple because I am a terrorist in the kitchen).
I boiled some whole wheat pasta, the mixed coconut milk with spinach and mushrooms and mixed everything together. Lastly i steamed salmon and cut into small pieces and mixed it into the pasta dish :) simple and healthy and I had plenty of leftovers!
